Around Europe in many dishes, 4--fishy Scottish delights

We were in Galloway, south west Scotland on the weekend, and stopped in at the Galloway Smokehouse to buy some truly Scottish delicacies! Had smoked mussels for an entree and a whole salmon cooked in the oven with butter and herbs, for a main course!
